BOILED HALIBUT

    Add 1 teaspoon salt and 1
    teaspoon sugar to each quart of
    water. Bring to boil. Drop in bite
    sized pieces of halibut. When fish
    comes to top of water, it's cooked.
    Serve with melted butter and
    lemon if desired.
ALASKA BAKED HALIBUT

    This recipe is for 1 pound of fish only. Increase each item according to
    amount of fish.

  • 1 c. white wine or sauterne
  • 1 tsp. salt
  • 1 lb. halibut fillet or red snapper
  • Fine bread crumbs
  • 1 c. Miracle Whip
  • 1/2 c. sour cream
  • 1/4 c. chopped green onions with tops
  • Paprika

    Mix wine and salt; marinate halibut for several hours or most of the day. Dip
    both sides in bread crumbs. Place in greased baking dish. Mix together the
    Miracle Whip, sour cream and onions; spread over fish and sprinkle top with
    some of the bread crumbs and paprika. Bake at 500 degrees approximately
    20 minutes. Allow a little more time for more fish. Check fish frequently while
    baking and when it flakes with a fork, it is done!
TANGY ALASKA HALIBUT BAKE

  • 2 lb halibut fillet
  • 1 cup sour cream
  • 1 cup mayonnaise
  • 1/4 cup chopped green onions
  • 3 tablespoons freshly squeezed lemon juice
  • 2 cups crushed Ritz crackers
  • 1 large yellow onion, sliced
  • 1/4 cup butter

    Melt butter in a large frying pan. Add sliced onion and
    sauté until onion is translucent then spread evenly over
    bottom of baking pan; set aside.
    In a bowl mix together sour cream, mayonnaise, green
    onions and lemon juice. Arrange halibut over top of
    onions. Spread sour cream and mayonnaise mixture
    over the top of the halibut. Sprinkle with crushed Ritz
    crackers.

    Bake at 375°F for 40-50 minutes (depending on
    thickness of fish).

HALIBUT BBQ

  • 1/4 cup olive oil
  • 2 teaspoons finely chopped garlic lightly browned in
    the hot olive oil
  • 1/2 teaspoon red pepper flakes
  • stir frequently
  • 2 to 3 tablespoons butter
  • 1 lime
  • 1/2 cup fresh chopped basil
  • 1 cup fresh chopped parsley
  • 1 cup dry white wine or dry vermouth

    Heat olive oil and butter gently in a saucepan. Add the
    finely chopped garlic, red pepper flakes, basil, and
    parsley. Juice the lime into this mixture. Stir in wine or
    vermouth, keeping sauce warm.
    Dredge the Halibut through the sauce and throw it on
    the hot grill. The flames will die down quickly. Baste
    each side liberally with the sauce as you turn the fish.
    Do not overcook.

    Serve the fish over pasta. The Farfalle-bowties work
    best. Just double the sauce recipe and you should
    have plenty of extra sauce to spoon over the fish on a
    steaming bed of pasta noodles.
BAKED HALIBUT WITH HERBS

  • 2 (16 oz.) pkgs. frozen halibut, partly thawed
  • 4 tbsp. butter
  • 1/4 c. finely chopped onions
  • 1 tsp. salt
  • 1/2 tsp. dried marjoram, crushed
  • 1/8 tsp. pepper
  • 3 tbsp. minced parsley
  • 2 tbsp. lemon juice

    Preheat oven to 350 degrees. Cut halibut into 6 serving
    size blocks. Place in a single layer in a shallow baking
    dish.

    Cream butter with onions, salt, marjoram, pepper and
    parsley, stir in lemon juice. Spread over halibut; cover.
    Bake 35 minutes or until fish flakes easily with a fork.
    Serve from baking dish. Garnish with parsley sprigs or
    lemon wedges.
BEER BATTER HALIBUT

  • 1 lb. halibut
  • 3/4 c. Bisquick
  • 1/3 c. beer
  • 1 tbsp. oil
  • 2 tbsp. grated onion
  • 2 egg whites, beaten stiff
  • Salt and pepper to taste
  • Garlic powder to taste
  • Accent to taste

    Cut halibut in 2-quart squares.
    Roll in batter. A pinch of sugar in
    batter will help brown. Deep fry
    until brown.
BARBECUE HALIBUT STEAKS

  • 1 tbsp. Dijon mustard
  • 1 clove garlic, minced
  • 1/4 tsp. pepper
  • 1 1/2 lbs. halibut
  • 1/3 c. vegetable oil
  • 2 tbsp. soy sauce

    Combine above and marinate
    halibut for 30 minutes to
    overnight. Grill 4-5 minutes per
    side over moderately hot grill.
    Baste with marinade while grilling.
    Serves 4.
