BEER BATTER FOR FISH
    Beat 1 egg with mixer.

  • 1 c. beer
  • 1 tsp. salt
  • 1 tsp. sugar
  • 1 tsp. baking powder
  • 1 scant c. flour

    Mix well, dip fish in batter and
    deep fry.
BEER BATTER FOR FISH &
ONION RINGS

  • 1 1/2 c. flour
  • 1/2 tsp. salt
  • 3 tsp. baking powder
  • 1 c. cold beer
  • 3 eggs

    Slightly beat the eggs in medium
    mixing bowl. Add remaining
    ingredients. Blend well with electric
    mixer. Use immediately to batter
    fish or onion rings for frying.
BATTER FOR FISH OR CHICKEN

  • 2 c. sweet milk
  • 3 eggs
  • 2 c. flour
  • 1/2 tsp. salt
  • 2 tbsp. baking powder
  • 1 tbsp. brown sugar

    Mix all ingredients together. Dip
    fish or chicken in batter and fry in
    deep fat or shortening, about 375
    degrees.
DEEP FAT FRY FISH BATTER

  • 3/4 to 1 c. flour
  • 2 tsp. dill weed
  • 1/2 tsp. salt
  • 1/2 tsp. baking soda
  • 1 tbsp. vinegar
  • 3/4 c. water

    Dry fish fillets with paper towels.
    Mix flour, dill week and salt
    together. Add baking soda and
    vinegar. Add water until right
    consistency to dip fish fillets. Deep
    fat fry as usual.
UNCLE ED'S FISH BATTER

    Season fish fillets 1-2 hours
    before frying.

    Blend together:
  • 3/4 c. liquid (milk/water)
  • 3/4 c. flour
  • 1/2 tsp. baking powder

    Dip fish fillets in batter; fry in oil.
BATTER FOR SHRIMP OR FISH

  • 4 eggs
  • 3 tbsp. cornstarch
  • 3 tbsp. plain flour
  • 1/4 tsp. salt (or to taste)
  • 1/2 tsp. baking powder

    Lightly mix eggs, cornstarch, flour,
    salt, and baking powder in a bowl.
    The batter will be lumpy. Dip clean
    shrimp or fish into batter and fry in
    medium high-heated oil at 375
    degrees. This is a good batter for
    fresh fried vegetables or for
    making sweet and sour pork.
